Baking Recipe Substitution List for Heart-Health



Heart-Healthy Baking Recipe Substitution List:

If your baking recipes call for chocolate, sour cream, whole eggs, butter, shortening, whole milk, or fatty cheese, use the substitution list below. You'll reduce saturated fat, total fat and total calories while maintaining the desired consistency and flavor. 

1 whole egg Egg = 1 egg white + 1 teaspoon vegetable oil or
use 2 egg whites

1 cup butter or margarine = 1 cup applesauce

1 cup shortening =  3/4 cup vegetable oil

1 cup whole milk = 1 cup skim milk

1 cup light cream = 1 cup evaporated skim milk

1 cup sour cream = 1 cup plain yogurt

1 oz baking chocolate = 3 tablespoons powdered cocoa + 1 tablespoon oil

1 cup Cream cheese =  4 tablespoons margarine + 1 cup dry low-fat cottage
cheese and a modest amount of skim milk for easy mixing

Sour cream = Plain fat-free yogurt + 1 tablespoon flour

High-fat cheese Low-fat cheese (fewer than 3 grams of fat per oz)
