Healthy Breakfast Recipe: Oven-Baked Whole Wheat Pancakes With Spiced Agave Syrup

This is a unique take on a traditional oven-baked pancake recipe. It substitutes white flour, egg yolks, cow's milk and regular maple syrup for some healthy ingredients that give it a rich, nutty, spicy and warm flavor.

Ingredients

1 1/2 cups whole wheat flour
1 1/2 cups all purpose flour
1/4 cup sugar
2 tsp baking powder
2 tsp salt
4 large egg whites
1/4 cup vegetable oil
3 cups of plain or vanilla flavored soy milk
Fresh sliced bananas
Spiced agave syrup (Use regular maple syrup if you prefer)
Optional: Add cinnamon or nutmeg to taste

Instructions

1. With an electric mixer, whip ingredients in a mixing bowl for one to two minutes, until the mixture is smooth.
2. Pour the batter into a lightly oiled half-sheet pan (18 x 13 inches). Lightly cover the top of the batter with light cooking oil spray for a golden-brown color.
3. Bake at 450° F for 10 minutes until the sheet is golden brown.
4. Cut each whole wheat pancake sheet into 5x5 inch servings.
5. Serve with 1/4 cup of fresh, ripe sliced bananas, 1/2 tablespoon of spiced agave syrup and a sprinkle of cinnamon or nutmeg.

Net carbs = 13 grams


Bananas and Spiced Agave Syrup:
 1/2 tablespoon Agave syrup adds 30 calories 
 1/4 cup bananas adds 33 calories and 1 gram of fiber
